pork shank/ham
extra dark soy sauce (laŏ tsō)
vinegar
ginger
garlic
cooking wine
scallions
rock sugar

Boil water. Add meat, cover and simmer 1-1/2 hours (until meat is soft). Remove water, reserving one bowl, and return to pot. Add all ingredients except for sugar. Simmer another hour with lid on, adding reserved water when needed, and turning the meat occasionally. Add sugar in the last 15 minutes.
